During theproduction process, the tea is partially fermented at a level of below 85%,unlike black tea which is fully fermented. After pan-firing, the leaves arecovered with a damp cloth and allowed to rest for about 10 to 30 minutes. Thisresting period allows the moisture to redistribute within the leaves,preventing breakage during rolling and aiding in shaping. It also enhances thehoney flavor (or Muscatel flavor) and mature fruit taste, turning the leafcolor red. This step differentiates Oriental Beauty Tea from black tea.
